Lately I’ve been loving savoury breakfasts and this has been one of my favourites! It’s a veggie egg scramble with quinoa, kale, and hummus! Also added EBTB seasoning on top and it was so good!

Breakfast Veggie Egg Scramble Bowls

Serves 2


Ingredients:

For the veggie egg scramble:

  • 1 medium yellow onion
  • 2 garlic cloves
  • 1 tablespoon avocado oil
  • 2 eggs
  • 1 red bell pepper
  • 1/2 cup chopped mushrooms
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt + pepper to taste

For the bowl:

  • 1 cup cooked quinoa
  • 1 bunch curly kale steamed
  • 2 tablespoons hummus (optional)
  • ebtb (everything but the bagel) seasoning (optional)

Directions:

  1. Start by adding the avocado oil to a frying pan over medium low heat. Add in your chopped onion and garlic and let it cook until the onions are translucent. Add you garlic powder and paprika and mix.

  2. Add in your bell pepper and mushroom and stir until softened. Lastly add in your eggs and stir until they are cooked. Remove from heat.

  3. To assemble your bowls, add the veggie egg scramble, steamed kale, quinoa, hummus, salt + pepper, and ebtb seasoning. Enjoy!
