Crunchy Cinnamon Granola

Makes around 2 cups granola
Ingredients:
- 1 cup rolled oats
- 1/2 cup chopped almonds
- 1/4 cup shredded coconut
- 1/4 buckwheat groats
- 1/4 cup melted coconut oil
- 1/4 cup honey or maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Directions:
Mix together all of your ingredients in a medium bowl until combined.
Spread onto a parchment lined pan and bake at 350°F for 15-20 min.
Let the granola cool completely before breaking apart into chunks!
