This granola recipe is so yummy and easy to make. It only uses a couple of ingredients, which you can change or substitute for different items! You can add in different nuts or seeds but in this recipe I used almonds, sunflower, and pumpkin seeds. Another variation of this recipe is to add in different spices, (like pumpkin pie spice, chai spice, apple pie spice, ect.), which would taste amazing!

I found adding buckwheat groats adds the perfect amount of crunch! I love having granola in the fridge to top on my oatmeal breakfast bowls, with greek yogurt and fruit, or smoothie bowls!

Make sure you let the granola cool for at least 10-15 min because it will harden and become super crunchy!


Healthy Crunchy Chocolate Granola

Servings: 6-8


Ingredients:

  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup buckwheat groats
  • 2 tablespoons ground flaxseed
  • 2 teaspoons sweet cinnamon
  • 1 teaspoon vanilla
  • 4 tablespoons cocoa powder
  • 1/3 cup pumpkin seeds
  • 1/3 cup sunflowers seeds
  • 1/3 cup sesame seeds
  • 1/2 cup maple syrup
  • 1/2 cup melted coconut oil

Instructions:

  1. Start by melting the coconut oil and mixing it together with the honey/maple syrup in a medium bowl until smooth.
  2. Add the rest of the ingredients to the bowl and mix until combined.
  3. Pour onto a parchment lined tray and bake at 350 F for 20-25 min. Stir the granola every 10 min. Let it cool for 10-15 min to harden.
  4. Enjoy!
