Healthy Coconut Lemon Energy Bars

Makes 6-8 bars
Ingredients:
- 1 cup shredded coconut
- 1 cup cashews
- 1 cup packed medjool dates
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
Directions:
In a food processor blend together all of the ingredients until combined.
Press into a pan and place in the freezer for 20-30 min or until hard - you can also roll these into little balls!
Cut into squares and enjoy!
