Fluffy Blueberry Muffins

Makes 10-12 muffins
Ingredients:
- 3 eggs
- 1/4 cup maple syrup
- 1 teaspoon vanilla
- 1/4 cup coconut oil
- 2 cups almond flour
- 1/4 cup arrowroot starch (can sub for tapioca flour or cornstarch)
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup fresh blueberries
Directions:
Mix all of the wet ingredients together in a medium bowl until combined. Add in the rest of the ingredients except for the blueberries and mix.
Gently fold in the blueberries. Scoop the batter into a lined or oiled muffin tin.
Bake at 350°F for 15-20 min or until a toothpick comes out dry.
