Frothy Hot Chocolate

Serves 1-2
Ingredients:
Hot chocolate:
- 2 cups almond milk (or any non-dairy milk)
- 2-3 tablespoons honey or maple syrup
- 1 tablespoon cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
Whipped coconut cream:
- 1/2 cup coconut cream (the thick part from the can)
- 1/2 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
Directions:
Start by whisking together the hot chocolate ingredients in a small sauce pan over medium heat. Heat until your desired temperature.
Pour the hot chocolate into a high speed blender (this is going to make it super frothy!) and blend on high for about 10-30 seconds.
To make the whipped coconut cream, add the ingredients to a bowl or food processor and mix until smooth.
To assemble, pour the hot chocolate into mugs and top with the coconut cream, dark chocolate and a cinnamon stick!
