Healthy Dark Chocolate, Cardamon, and Pistachio Cookies

Ingredients:
- 1/2 cup softened coconut oil (not melted!)
- 1/3-1/2 cup coconut sugar (depending on how sweet you’d like the cookies!)
- 1 flax egg (1 tablespoon ground flaxseed + 2 1/2 tablespoons water, mix and let it “gel” for 5-10 min.)
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup chopped pistachios
- 1/2 cup chopped dark chocolate
Instructions:
Start by making the flax egg in a small bowl and setting it aside.
In a medium bowl cream together the coconut oil and coconut sugar. Make sure the mixture is smooth and there are no coconut oil chunks.
Add in the flax egg and vanilla extract and mix. Add in the rest of the ingredients except for the pistachios and chocolate and mix.
Gently fold in the chopped pistachios and chocolate chunks until combined.
Roll into balls and flatten onto a parchment lined pan. Bake at 350°F for 10-12 min or until golden brown. Let the cookies cool for 10 min.
