Healthy Lemon Cookies

Makes 8-10 cookies
Ingredients:
- 3 tablespoons softened coconut oil (not melted!)
- 3 tablespoons cashew butter (or any nut/seed butter)
- 1/4 cup coconut sugar
- 1 flax egg (1 tablespoon ground flaxseed + 2 tablespoons water)
- 1 teaspoon vanilla
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 1/3 cup almond flour
- 2 tablespoons coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Directions:
Start by making your flax egg by mixing together the ground flaxseed and water in a small bowl. Let it sit for 5-10 min to “gel”.
Add in all of your ingredients together in a medium bowl and mix until combined. Roll into cookies and flatten onto a parchment lined pan.
Bake at 350°F for 10-12 min.
