Matcha Coconut Energy Bites

Makes 10-12 balls
Ingredients:
- 1 cup almond flour
- 1 cup unsweetened shredded coconut (Plus extra for rolling the balls in)
- 1/4 cup maple syrup
- 1 tablespoon matcha powder
- 3 tablespoons cashew butter
- 2 tablespoons melted coconut oil
- 1 scoop collagen (optional)
- 1 teaspoon vanilla extract
Directions:
Start by mixing all of the ingredients together in a medium bowl until combined.
Form into balls and roll them in more shredded coconut.
Place the balls in the freezer for 15-20 min and enjoy!
