So I tried matcha for the first time a few weeks ago and omg why didn’t I try it earlier?!? Decided to make another energy ball recipe and they are so good!! Love how they are super easy to make and yummy!

Matcha Coconut Energy Bites

Healthy Num Num | Michelle

  • prep time: 10 min
  • freeze time: 20 min
  • total time: 30 min

Makes 10-12 balls


Ingredients:

  • 1 cup almond flour
  • 1 cup unsweetened shredded coconut (Plus extra for rolling the balls in)
  • 1/4 cup maple syrup
  • 1 tablespoon matcha powder
  • 3 tablespoons cashew butter
  • 2 tablespoons melted coconut oil
  • 1 scoop collagen (optional)
  • 1 teaspoon vanilla extract

Directions:

  1. Start by mixing all of the ingredients together in a medium bowl until combined.

  2. Form into balls and roll them in more shredded coconut.

  3. Place the balls in the freezer for 15-20 min and enjoy!
