No-Bake Chocolate Chip Granola Bars

Wow oh wow the smell of these cookies is so so good!! I’m a huge fan of citrus desserts and this one is definitely one of my favs! These cookies also spread a lot and get super fluffy - so make sure to leave enough room around them when baking!

No-Bake Chocolate Chip Granola Bars

Healthy Num Num | Michelle

Makes 8-10 bars


Ingredients:

  • 1/3 cup peanut butter (can sub for any nut/seed butter)
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/3 cup sliced almonds (can sub for chopped almonds)
  • 1/4 cup chocolate chips (plus more for the top!)

Directions:

  1. Mix together all of the liquid ingredients until smooth.

  2. Add in the rest of the ingredients and mix until combined.

  3. Press into a pan and place in the freezer for 20-30 min or until hard. Cut into bars and enjoy!
