Peanut Butter Chocolate Chip Cookies


These cookies are so soft and yummy!! Love making peanut butter desserts and these are perfect if you are looking for a healthier cookie!


Peanut Butter Chocolate Chip Cookies

Makes 10-12 cookies


Ingredients:

  • 1 1/2 cups almond flour
  • 1/3 cup coconut sugar
  • 1/2 tsp baking soda
  • 2 eggs or flax eggs (see notes)
  • 1/3 cup peanut butter (can sub for any nut/seed butter)
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Directions:

  1. Whisk together the dry ingredients until combined.

  2. Add in the rest of the ingredients, except for the chocolate chips, and mix with a spoon until combined. Mix in the chocolate chips.

  3. Using a cookie scoop or two spoons, scoop the dough into balls onto a parchment lined pan. Make sure to leave enough room between the cookies as they spread!

  4. Bake at 350°F for 9-11 min or until golden brown. Enjoy!
