Peanut Butter Chocolate Chip Cookies

Makes 10-12 cookies
Ingredients:
- 1 1/2 cups almond flour
- 1/3 cup coconut sugar
- 1/2 tsp baking soda
- 2 eggs or flax eggs (see notes)
- 1/3 cup peanut butter (can sub for any nut/seed butter)
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Directions:
Whisk together the dry ingredients until combined.
Add in the rest of the ingredients, except for the chocolate chips, and mix with a spoon until combined. Mix in the chocolate chips.
Using a cookie scoop or two spoons, scoop the dough into balls onto a parchment lined pan. Make sure to leave enough room between the cookies as they spread!
Bake at 350°F for 9-11 min or until golden brown. Enjoy!
