Soft Gingerbread Cookies

Healthy Num Num | Michelle

Makes 10-12 cookies


Ingredients:

  • 2 cups almond flour
  • 2 tablespoons tapioca starch (can sub for arrowroot flour or corn starch)
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1/4 cup maple syrup
  • 1 egg
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract
  • optional: granulated sugar to roll in (I used a monk fruit blend)

Directions:

  1. Start by mixing together all of the dry ingredients in a large bowl.

  2. Add in the wet ingredients and mix again.

  3. Roll into balls and roll in granulated sugar is using. Flatten on to a parchment lined pan and bake at 350°f for 10-15 min!
