Baked Falafel Bowls With Lemon Tahini Dressing

Makes 12-14 falafels
Ingredients:
Falafels:
- 1 15 oz can chickpeas (about 1 1/2 cups)
- 1 cup packed parsley
- 1 cup packed cilantro
- 1 medium yellow onion diced
- 4 cloves garlic
- 2 teaspoons ground cumin
- 2 teaspoons baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
Lemon tahini dressing:
- 1/2 cup tahini
- 1/2 cup cold water
- 1 tablespoon garlic powder
- juice from two lemons
- 1/2 teaspoon salt
- pinch of black pepper
- 1/8 teaspoon cumin (optional
Instructions:
To make the falafels combine all of the ingredients except for the chickpeas into a food processor. Blend until smooth.
Add in the chickpeas and blend. Scoop into balls and place onto a parchment lined pan.
Bake the falafels at 400°F for 25-35 min.
To make the sauce, combine all of the ingredients together in a bowl. Add more water if you’d like the consistency to be thinner.
Assemble the bowls with salad and sweet potatoes!
