Baked Falafel Bowls With Lemon Tahini Dressing

This falafel recipe is a staple and every time I make it it’s so yummy!! I paired it with my lemon tahini sauce recipe (see below), salad, and sweet potato!

Baked Falafel Bowls With Lemon Tahini Dressing

Makes 12-14 falafels


Ingredients:

Falafels:

  • 1 15 oz can chickpeas (about 1 1/2 cups)
  • 1 cup packed parsley
  • 1 cup packed cilantro
  • 1 medium yellow onion diced
  • 4 cloves garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper

Lemon tahini dressing:

  • 1/2 cup tahini
  • 1/2 cup cold water
  • 1 tablespoon garlic powder
  • juice from two lemons
  • 1/2 teaspoon salt
  • pinch of black pepper
  • 1/8 teaspoon cumin (optional

Instructions:

  1. To make the falafels combine all of the ingredients except for the chickpeas into a food processor. Blend until smooth.

  2. Add in the chickpeas and blend. Scoop into balls and place onto a parchment lined pan.

  3. Bake the falafels at 400°F for 25-35 min.

  4. To make the sauce, combine all of the ingredients together in a bowl. Add more water if you’d like the consistency to be thinner.

  5. Assemble the bowls with salad and sweet potatoes!
