Crunchy Peanut Salad

Serves 2
Ingredients:
Base:
- 1/4 of a red or green cabbage thinly sliced
- 2 bell peppers
- 1/4 of a large cucumber thinly sliced
- 1 large carrot
Peanut dressing:
- 1/4 cup peanut butter
- 1 tablespoon soy seasoning/coconut aminos (or low sodium soy sauce)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ginger powder
- 2 tablespoons cold water to thin
Directions:
Start by thinly slicing all your veggies. Place them in a big bowl while you make your dressing.
Blend all the dressing ingredients together in a high speed blender until smooth. Pour over your salad and enjoy!
