Healthy Paleo Bagels

Makes 6-8 bagels
Ingredients:
- 1 cup cassava flour
- 1 1/2 cup arrowroot flour
- 4 eggs + 1 for the egg wash
- 1/4 cup olive oil
- 2 tablespoons non-dairy milk (I used almond)
- 1 tablespoon water
- 1 teaspoon baking powder
- Salt + pepper to taste
- Everything But the Bagel Seasoning (or sesame seeds, poppy seeds, dried onion)
Other:
- smoked salmon
- vegan or regular cream cheese
Directions:
Combine all of the dough ingredients together in a food processor and blend until combined.
Bring a huge pot of water to boil. Form and shape your bagels (I like to make mini bagels). Once the water is boiling, gently drop your bagels in. Boil for about a minute or until the bagels rise to the top.
Place the bagels on a parchment lined sheet. Whisk your egg and spread over top each bagel.
Bake at 350°F for 20-25 min!
