Spinach Red Pepper Egg Bites

Healthy Num Num | Michelle

Makes 10-12 cups


Ingredients:

  • 10 eggs
  • 1 cup chopped spinach
  • 1 red bell pepper diced
  • 1/4 cup nutritional yeast - or vegan cheese
  • salt + pepper to taste

Directions:

  1. Whisk together your eggs until combined. Add in the rest of the ingredients and mix again.

  2. Spoon into a greased or lined muffin tin and bake at 350°F for 20-25 min. Enjoy!
