Tomato Toast with Whipped Feta

Serves 2
Ingredients:
- 2 slices of sourdough bread (or your choice of bread)
- 2 ripe Village Farms Fresh Heirloom Tomatoes
- 4-6 basil leaves
- 1 cup cubed feta
- 2 garlic cloves
- 1/4 cup olive oil
- 2 tbsp water to thin
- 1 tsp herb seasoning
- 1 tsp salt
- 1/2 tsp ground black pepper
- Sprinkle of flaky sea salt to garnish
Directions:
- Start by making the whipped feta by adding all ingredients to a blender. Blend until combined. Add in a little more water if needed to get to your choice of consistency.
- Toast sourdough slices. Add whipped feta on top.
- Slice heirloom tomatoes and layer on the toast.
- Garnish with fresh basil and sprinkle with flaky sea salt. Enjoy!
