Soft Chocolate Chip Cookies


These cookies are soft, fluffy, and little chewy!!


Soft Chocolate Chip Cookies

Makes 10-12 cookies


Ingredients:

  • 1/2 cup softened coconut oil (not melted!)
  • 1/3 cup coconut sugar
  • 2 eggs (or two flax eggs to make it vegan)
  • 1 teaspoon vanilla
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/2 cup chocolate chips

Directions:

  1. Start by creaming together the coconut oil and coconut sugar until smooth. Add in your eggs and vanilla and mix.

  2. Add in the rest of the ingredients except for the chocolate chips and mix.

  3. Fold in your chocolate chips. Roll into balls and flatten onto a parchment lined pan.

  4. Bake at 350°f for 9-11 min or until golden brown!
