Fluffy Scones

Makes 6-8
Ingredients:
- 2 cups almond flour
- 1/2 cup tapioca flour
- 2 eggs (or flax eggs)
- 3 tablespoons avocado or olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- optional: vegan or regular butter
Directions:
Mix together with a spoon all of the ingredients in a large bowl.
Roll into balls and slightly flatten onto a parchment lined pan.
Bake at 350°f for 25-30 min. Slice in half and spread your butter if using and enjoy!
