Sesame Tempeh Bowls

Serves 2-3
Ingredients:
- 200 grams tempeh - about 1 cup chopped
- 1/4 cup soy seasoning, tamari, soy sauce, or coconut aminos
- 2 tablespoons water
- 1 tablespoon toasted sesame oil
- 2 tablespoons maple syrup
- 1 tablespoon rice vinegar
- 1/2 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1 tablespoon sesame seeds
- 1 tablespoon tapicoa starch - can sub for arrowroot flour or cornstarch!
- veggies of choice (I used about 2 cups broccoli!)
- white or brown rice
Directions:
Start by making your tempeh marinade by mixing together all of the ingredients in a small bowl. Add in the chopped tempeh and mix. Let the tempeh marinade for 1-2 hours in the fridge.
Spread the tempeh onto a parchment lined pan along with your cut up veggies. Pour the rest of the marinade on top and bake at 425°F for 25-35 min. Halfway through mix the tempeh and veggies.
Serve with rice and enjoy!
